Veggie Power Bowl

Just a quick-make at uni, great for a lunch/dinner filled with veg and grains therefore great for those on a plant based diet.

Made with:

- Quinoa

- Broccoli

- Mixed Beans

- Pistachios (Optional)

- Sweetcorn

- Avocado

1) Rinse, boil and cook the quinoa for about 20 minutes with the saucepan lid on.

2) At the same time, in another pan, boil the broccoli and cook the beans.

3) Prepare the avocado by slicing it into thin layers

4) Add in the Sweetcorn

5) Chop up the Pistachios for a garnish

and ENJOY!
